What's better than a cookie? If you're asking us, little else...particularly when that cookie includes chocolate and peanut butter. But we'll take this hypothetical cookie and raise you one: what if the recipe didn't even require the oven?

Yep, these No-Bake Cookies come together in 10 minutes without you so much as having to touch your oven. You'll only need a pan, stovetop, and the use of your fridge—that's all! These are about as low-maintenance as you can get, plus they're naturally egg-free and loaded with the yumminess of the ingredients above.

So, calling all Lovers of Reeses Cups (who have likely given them up since they aren't vegan), oats, and cookies in general: we've got a treat for you!

10-Minute No-Bake Cookies

Ingredients

  • 1 1/2 cups vegan cane sugar
  • 3 tablespoons dark cocoa powder
  • 1/2 cup vegan butter
  • 1/2 nut butter of choice (peanut preferred)
  • 1/2 cup almond or coconut milk
  • 2 teaspoons vanilla
  • 3 cups gluten-free oats

Instructions

  1. In a saucepan over medium-low heat, whisk sugar, cocoa powder, and vegan butter together. Continue stirring until sugar has dissolved completely. When mixture begins to bubble, reduce heat to low and cook an additional 2-3 minutes. Continue stirring to prevent sticking.
  2. After your mixture has boiled and cooked the additional 2-3 minutes, remove it from the heat and add peanut butter and vanilla. Stir to incorporate until the peanut butter has melted in. Follow with the 3 cups of oatmeal, stirring carefully into the oats are soaked thoroughly.
  3. Either lightly grease two cookie sheets or cover them with parchment paper. Spoon cookies out onto the sheet, keeping them gathered together. Each should have 12 cookies. Stick them in the fridge until they're completely cooled and set. To fast-track your cookies, you can pop them in the freezer and they'll be ready in less than 45 minutes. Just don't forget them there!

Additional Notes:

Pro Tip: Chill your cookie sheet in the freezer for 10-15 minutes before scooping the cookies onto them; they'll set up faster!
