Spinach and artichoke is one of those combinations that seldom steers you wrong. When it comes to cooking, though, it always seems like these ingredients come together in an elaborate dish. Although it's fun to incorporate these ingredients in a more detailed recipe like this pot pie, you won't always have the time to devote to the kitchen!

That's why we're excited to share our recipe for this simple, warming salad. Utilizing marinated artichoke hearts, cherry tomatoes, spinach, and apple cider vinegar, it couldn't be easier. In less than seven minutes and with only one pan, you'll have an excellent side to spruce up any meal!

7 Minute Vegan Warm Spinach and Artichoke Salad

Ingredients

  • 1 5 oz container baby spinach
  • 1 cup cherry tomatoes
  • 2/3 cup marinated quartered artichoke hearts
  • 3 teaspoons apple cider vinegar
  • Sea salt
  • Fresh cracked pepper

Instructions

  1. In a large sautee pan over medium heat, place marinated artichoke hearts, scooping some of the oil out into the pan.
  2. Allow the artichoke hearts to heat for about a minute before adding a package of spinach.
  3. Cover with a lid. Allow to cook 1-2 minutes, stir, then add whole cherry tomatoes and apple cider vinegar. Cover and cook an additional 3-5 minutes, stirring frequently, until spinach has begun to wilt and tomatoes are heated through.
  4. Salt and pepper generously, then remove from the heat.
  5. Split between two dishes and serve. Enjoy!
