At some point in your vegan journey, you've probably come across veggie-averse friends or family who scoff at the mere idea of not eating animal products. You know, the same ones who imagine you chewing on celery stalks and carrot greens like a rabbit? Of course, vegans eat plenty of vegetables—but as you know, that's far from the whole diet!

Well, our recipe for Vegan Veggie Kebabs may not debunk these myths anytime soon, but they will prove just how delicious vegetables can be when correctly prepared. You should even be able to get your veggie-phobic friends on board! These are fun to prepare solo or in a group (no doubt, with arguments over the superior skewer order) and they only take about ten minutes on the grill.

Ingredients

  • 1 batch Vegan teriyaki sauce
  • 1 large green zucchini
  • 1 pint white mushrooms
  • 1 medium red onion
  • 2 bell peppers (color of choice)
  • 1 ripe pineapple
  • 1 medium yellow squash
  • 1 pint cherry tomatoes

Instructions

  1. First, prepare the homemade vegan teriyaki sauce. Set the sauce aside for brushing onto kebabs.
  2. Wash all of your veggies and prepare them for the skewers. Cut the zucchini into discs a 1/2-inch in thickness, then in half; mushrooms may be halved if large and left whole if small; the red onion should be chopped into large (minimum of one-inch) slices; the bell pepper should be cut similarly to the onion; core the pineapple and slice into squares; cut the yellow squash into half-inch discs; and leave the cherry tomatoes whole.
  3. Prepare the skewers (the vegetables may yield as many as 4-8, depending on skewer length). You can arrange them in any order you choose! One arranged, coat each kebab evenly with the teriyaki sauce. If you have some left over, save it for basting.
  4. Preheat grill to medium-high heat and gather your utensils. You'll need a pair of tongs for turning the skewers and a basting brush for the sauce. Place the kebabs on the hot grill and close the lid.  Open the lid to rotate every few minutes, checking frequently, until kebabs sport grill marks and veggies are softened but not mushy (about 10 minutes). It's time to enjoy them!

Additional Notes:

Pro Tip: Feel free to get creative with your veggie combinations! For example, try swapping the pineapple for mango!

When it comes to skewers, you have many choices: you can invest in a good set of stainless-steel skewers, or hunt down a bamboo option.
