Our recipe for an NYC-Inspired Bagel capitalizes on all the best parts about this delightful breakfast without any processed ingredients. You'll easily be able to recreate this wholesome recipe from the goods at your local Farmer's Market, and it only takes 15 minutes, making this a go-to meal—even when you're short on time.

NYC Inspired Vegan Bagel

This 15-minute vegan bagel pays homage to the cream-cheese-loaded concoctions from the big city!

  • 4 Everything Bagels
  • 1/2 medium white onion
  • 1 large tomatoes
  • Extra-virgin olive oil
  • 1 large avocado
  • 2 tablespoons capers
  • 1/2 lemon
  • Sea salt
  • Pepper


  1. Thinly slice the tomato and onion. Salt tomato and set on a paper towel to drain.
  2. To make the Avocado Schmear, mash 1 avocado with the juice of 1/2 lemon, 2 tablespoons of capers, sea salt to taste, and pepper.
  3. Toast your bagel as desired. To assemble the bagels, spread the halves generously with the Avocado Schmear. Top with two slices of tomato each, followed by onion.
  4. Drizzle lightly with olive oil. Garnish with a sprinkle of sea salt and cracked pepper, and it's ready to serve!
