Chex Mix. This phrase might evoke nostalgia: plastic bags in convenience store light, crunch, and salt. If you were anything like us, this was one of your top snacks in your pre-plant-based days! If you're vegan, though, you've had to cross this addictive snack off your list. Today, we're happy to share our replacement recipe. Just because your diet is animal-friendly doesn't mean you have to say goodbye to all the foods you once loved!

We're big snack fans over here (check out our Vegan Stovetop Popcorn), but despite that, we haven't shared nearly enough recipes! I'm sure it comes as no surprise that one of them is for this Chex Mix. Check it out below, and be sure to let us know what you think.

Quick and Easy Spicy Vegan Chex Mix

This Vegan Chex Mix makes a great snack for any occasion. Plus, it's so easy to make, you might just start keeping your pantry stocked with all the necessary ingredients!

Ingredients

  • 3 cups Corn Chex
  • 3 cups Rice Chex
  • 3 cups Cheerios
  • 3 cups gluten-free pretzels
  • 1 cup peanuts
  • 1/2 cup cashew pieces
  • 3 tablespoons vegan butter
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon Frank's Red Hot
  • 3 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons dried minced onion
  • 1 teaspoon dried parsley
  • 1 teaspoon Tajín seasoning

Instructions

  1. Preheat oven to 300 degrees Fahrenheit. In a small saucepan over medium heat, melt the vegan butter. Once the butter is melted and beginning to simmer lightly, add the olive oil and whisk to combine. Turn the heat to low. Add the Frank's Red Hot, chili powder, garlic powder, minced onion, parsley, and Tajín seasoning. Continue cooking and whisking until the spices are dissolved and sauce is lightly simmering; it should be dark in color.
  2. In a large bowl, combine both kinds of Chex, Cheerios, pretzels, and nuts. Toss with large utensils to combine. Slowly, pour about half of your coating over the mixture, distributing it over the entire surface area. Toss vigorously, making sure that you reach the cereal at the edges and scrape up from the bottom of the bowl. Once it has been well distributed, pour the rest of the coating on and toss again, until the pieces are coated. Some will naturally have more coating than others.
  3. Distribute among two shallow baking sheets and place for 10 minutes in the oven, then stir lightly and rotate. Continue to cook for another 5–10 minutes, watching carefully to ensure it doesn't burn. Allow to cool for 10–15 minutes before serving; you should find the chex mix dry when cooled. Enjoy!

Pro Tip: Not gluten-free? Feel free to add Wheat Chex! You can also get experimental with the nuts you add—don't feel like you have to stick to what's included in the recipe.
