Popcorn: often lauded as the Holy Grail of snacks, it's hard to go wrong when you make this vegan stovetop popcorn for a movie night. When it comes to popcorn options, many people rely on microwave variety, which is often full of additives. Although it takes a few minutes more, vegan stovetop popcorn is a much healthier⁠—and, in our humble opinion, infinitely more ⁠tasty—alternative to the nuked version.

Ingredients

  • 3 tablespoons refined coconut oil
  • 1/2 cup GMO-free popcorn kernels
  • 1 tablespoon nutritional yeast
  • Coconut or olive oil spray
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon vegan butter
  • 1 tablespoon natural maple syrup
  • Sea salt to taste

Instructions

  1. In a 5.5 quart pan, melt 3 tablespoons of coconut oil over medium heat. Once melted, test one kernel of popcorn; it should sizzle when it hits the pan and pop within 30 seconds. When a kernel successful pops, add the rest of your kernels and cover the pan with a lid. Make sure to vent the heat and give the pan intermittent shakes to keep the popcorn from burning. Once most of your kernels have popped and the popping slows, take the pan off the heat and remove the lid.
  2. Prepare your toppings.
    Cheesy: Spray popcorn generously with vegan cooking oil of choice. Add nutritional yeast and salt to taste.
    Garlic Herb: Combine garlic powder, herbs, and cracked sea salt in small dish. Spray popcorn with cooking oil of choice and sprinkle to taste.
    Sweet: Melt vegan butter over low heat, add maple syrup, and cook until simmering. Drizzle over popcorn and salt to taste.

Additional Notes:

  • Pro Tip: Nutritional Yeast is a seasoning that can be found in most grocery stores. Many vegan recipes use it for its nutty flavor, which resembles cheese. It's loaded with B vitamins, and fortified versions of the product are especially great for meeting those B12 requirements. Make sure to eat it in moderation, though; it contains high levels of niacin (vitamin B3), which can cause facial flushing if consumed in high doses.
