Our recipe for sweet potato oven fries are simple (with about 15 minutes of prep time, the oven does most of the work), flavorful (the sweetness of, well, sweet potatoes is amplified, but balanced by a bitterness from roasting), and actually pretty healthy! You can add this versatile side to a number of dishes—whether a soup, sandwich, or wrap—to round out your meal.

Ingredients

  • 6 medium sweet potatoes
  • 1/4 cup olive oil
  • Sea salt
  • Pepper
  • 3 teaspoons Garlic powder

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Slice the sweet potatoes vertically 4-5 times per potato, then cut the slices into long strips (about 1/2 inch wide). When all the potatoes are sliced, place them in a large bowl. Coat with 1/4 cup olive oil, tossing the fries by hand until they're evenly coated. Sprinkle with garlic powder and coat generously with pepper and sea salt. Continue to hand toss while you distribute the seasonings.
  2. Roast fries for about 20 minutes in the oven, then turn over. While turning the fries, salt them generously again (or to taste, if you don't like much salt). Cook another 7-10 minutes, until softened and crisp on the outside. If fries begin to blacken, remove from them oven. Eat plain, or serve with your favorite vegan condiment(s)!

Additional Notes:

  • Pro Tip: For a dip-worthy, simple aioli, whisk 1 teaspoon of garlic powder and a squeeze of lemon juice into 1/4 cup veganaise.
  • Get creative with toppings! Rosemary, chili powder, or nutritional yeast (just please, not together) make delicious additions.
