It's a twist on the classic 1-1-1 recipe many may know from their early days in the kitchen, when parents tentatively allowed their children to use the oven. This recipe has stood the test of time for a reason, though—when something so delightfully simple and delicious comes along, it's wrong to let it go.

Ingredients

  • 1 cup natural peanut butter (or nut butter of choice)
  • 3/4 cup cane sugar, plus more for sprinkling
  • 1 tablespoon flax meal
  • 3 tablespoons boiling water

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. In a small cup or mug, whisk 3 tablespoons of boiling water into 1 tablespoon of flax meal, until combined. Let sit for 5 minutes to thicken.
  2. In a bowl, combine one cup of peanut butter (or your nut butter of choice) with 3/4 cup cane sugar. Add your flax meal and stir to combine.
  3. When all ingredients are integrated and the batter is stiff, scoop by spoonfuls onto an ungreased baking sheet (makes about 15). Using the tines of a fork, gently press down the cookies vertically, then repeat horizontally. Sprinkle tops with sugar.
  4. Bake for 10-12 minutes, until bottoms begin to brown. Let sit at least 5 minutes before taking up onto a cooling tray.

Additional Notes:

Pro Tip: Do you check your peanut butter label? Many varieties have tons of unnecessary additives, like sugar, but a good peanut butter should only contain peanuts (and sometimes salt).
