Luckily, we've got a ridiculously simple recipe for you that far surpasses the lunchbox dessert of yore (and it actually tastes like chocolate)!

Ingredients

  • 2 1/4 cups almond milk
  • 4 tablespoons cornstarch
  • 1/3 cup dark chocolate cocoa powder
  • 1/4 cup organic cane sugar

Instructions

  1. In a medium saucepan over medium heat, combine cane sugar, cocoa powder, and 2 cups almond milk. Whisk vigorously, until cocoa powder has been incorporated.
  2. Whisk 3 tablespoons of cornstarch into 1/4 cup almond milk, until smooth. Stir into mixture on stove until incorporated.
  3. Continue to stir over heat, until mixture begins to bubble and thicken. Turn heat to low and continue stirring. You may need to transition to a rubber scraper to keep the mixture from sticking. The pudding should thick enough to stick to the whisk/scraper, but may still appear slightly thin.
  4. After about 5 minutes of stirring over low heat, take the pan off the heat and divide the pudding evenly among 4 dishes. You may serve the pudding hot, or wait until it cools.

Additional Notes:

Pro Tip: Get playful with your pudding toppings for added flavor and texture! Diced dark sweet cherries, toasted almonds, crumbled dark chocolate, or a drizzle of peanut butter make for a fabulous addition.

This recipe contains very little sugar, but you can increase it to a 1/3 cup to heighten the sweetness.
